WINEMAKING
The 2021 Cabernet Franc was harvested and destemmed before undergoing a cold soak, followed by fermentation in small 1.5-ton bins over two weeks. After fermentation, the must was gently pressed and settled. The wine was then aged for 26 months in French oak barrels, with 20% of the barrels featuring new oak to enhance texture and complexity. This extended aging allowed for the full integration of flavors and tannins, resulting in a wine with depth, elegance, and balance.
