WINEMAKING
The 2021 Albariño was harvested at night to preserve its freshness and fruit integrity. After being destemmed and gently pressed, the juice underwent a cold fermentation in stainless steel for 14 days, with a special yeast chosen by Winemaker Adrian Bolshoi to accentuate the wine’s floral and varietal characteristics. The wine was then aged at 40°F for eight months in stainless steel, with 5% aged in neutral French oak barrels to enhance its body and mouthfeel. The result is a fresh, bright Albariño that perfectly captures the essence of the Santa Ynez Valley’s coastal climate.
