TASTING NOTES
The Chardonnay Béton opens with effusive aromas of golden apple, orange blossom, honeycomb and mineral. A soft, rounded palate fills the mouth with seamless flavors of pear, melon and citrus with hints of light spice. The concrete influence is most notable in the wine’s crunchy acidity and minerally textures, all of which come together on a smooth, effortless finish.

WINEMAKING
Béton is the French word for concrete, reflecting the vision behind this wine: to create an elegant Chardonnay that displays the unique nuances gained from aging the wine exclusively in concrete. The grapes were harvested at night and pressed in the early morning. After cold settling, the juice was fermented in stainless steel over a period of 14 days. The new wine was then racked off the lees and aged for five months in a 900-gallon Nomblot concrete tank made from natural washed gravel, sand and well water. Concrete aging strikes a distinctive middle ground between stainless and oak, balancing impressive textures with fresh fruit character.
