50% Cabernet Franc | 50% Syrah

Tasting Notes
The 2023 Cabyrah opens with inviting aromas of dark cherry, plum, and blackberry layered with rose petal, baking spice, mocha, and subtle dried herbs. On the palate, the wine is rich and mouthfilling, combining the freshness and finesse of Cabernet Franc with the plush, velvety texture of Syrah. Flavors of black cherry, blueberry, cedar, cinnamon, and toasted oak unfold across the palate, while hints of white pepper and eucalyptus add lift and complexity. Fine tannins and bright acidity carry through to a long, polished finish that is both supple and structured.

Food Pairings
The 2023 Cabyrah pairs beautifully with hearty, savory dishes such as:

  • Grilled steak or tri-tip
  • Rosemary lamb chops
  • Braised beef short ribs
  • Roast chicken with wild mushrooms
  • Mushroom risotto
  • Aged cheeses and charcuterie

Estate Vineyard
The fruit for the 2023 Cabyrah was sourced from select blocks on our 35-acre Brick Barn estate vineyard. Planted at approximately 550 feet elevation in rocky loam and limestone soils, these hillside blocks benefit from warm sun exposure tempered by cooling Pacific breezes just 10 miles away. This maritime influence preserves natural acidity and structure while allowing the fruit to achieve full ripeness and layered flavor development.

Winemaking
The Cabernet Franc and Syrah for the 2023 Cabyrah were harvested separately at peak ripeness and fermented in small lots to preserve varietal character and site expression. After destemming, the fruit underwent cold soak prior to fermentation to enhance color, aromatics, and flavor extraction. The Cabernet Franc was aged in French oak barrels for 26 months, while the Syrah was aged for 20 months in a combination of 90% French and 10% American oak, with 40% new oak. The final blend unites the lifted aromatics, savory structure, and freshness of Cabernet Franc with the dark fruit, spice, and velvety depth of Syrah, creating a wine of balance, richness, and elegance.
