WINEMAKING
The fruit for the 2021 Grenache was harvested at night to ensure fresh varietal character. After destemming, the grapes underwent a four-day cold soak for gentle extraction of color and flavor. The fermentation took place in open-top stainless steel fermenters, where daily punchdowns and pumpover ensured optimal extraction and aeration. After fermentation, the wine was gently pressed, settled, and racked to French oak barrels, where it aged for 20 months. The wine was aged entirely in neutral oak, allowing the pure Grenache qualities to shine through, reflecting the estate’s unique terroir.
